Minestrone Soup (makes 4-6 servings) |
Ingredients:
- 3 cups water
- 1/2 cup each: carrot, celery, onion (chopped)
- 2 cloves garlic, minced
- 1 tsp each: basil and oregano, crushed
- 1/8 tsp. pepper
- 1, 15 oz. can red kidney beans
- 1, 15 oz. can tomatoes, chopped
- 1/2 cup cabbage, coarsely chopped
- 1/2 cup zucchini, sliced
- 1/2 cup pasta, uncooked
Directions:
- In a large sauce pan, combine water, carrots, celery, onion, garlic, basil, oregano, and pepper.
- Bring to boil, reduce heat. Cover and simmer for 15 minutes.
- Drain can of kidney beans and add kidney beans, tomatoes, cabbage, zucchini and pasta. Return to boil, reduce heat. Cover and simmer for 5 to 10 minutes, until pasta is tender.
