Apple and Granola Crumble (makes 6 servings) |
Ingredients:
- 1-1/2 cups apple cider
- 1/4 cup dried apricots, coarsely chopped
- 1/4 cup dried cranberries
- 1/2 cup plain granola*
- 1/2 cup packed brown sugar, divided
- 5 tablespoons all-purpose flour, divided
- 1 teaspoon ground nutmeg, divided
- 3 tablespoons honey
- 1 teaspoon vanilla extract
- 5 medium apples, peeled, cored and cut into 8 wedges each
- Nonfat cooking spray
Directions:
- Preheat oven to 350º.
- Add cider to a medium saucepan then bring to boiling. Remove from heat then stir in apricots and cranberries then let stand for 15-20 minutes. Drain fruit in a sieve or colander over a bowl and reserve cider then set aside.
- Prepare topping: In a small bowl, combine dried fruit, granola, 1/4 cup of the brown sugar, 1 tablespoon of the flour and 1/2 teaspoon of the nutmeg.
- Prepare filling: In a large bowl, add remaining sugar, flour and nutmeg. Gradually add in reserved cider, honey and vanilla and stir to combine. Add apple wedges and lightly toss until coated.
- Spray an 11 x 17 baking dish with nonfat cooking spray. Add apples then sprinkle with granola topping. Bake at 350º for 1 hour then serve.
