Wheat berry salad

  • 1 cup hard winter wheat berries1 cup red onion, finely diced
  • 6 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 3 whole scallions, minced
  • ½ red bell pepper, finely diced
  • 1 carrot, finely diced
  • ½ tsp black pepper, freshly ground

Directions:

  1. Place the wheat berries and 3 cups of boiling salted water in a saucepan and cook, uncovered over low heat for approximately 45 minutes, or until they are soft. Drain.
  2. Sauté the red onion in 2 tablespoons of olive oil over medium-low heat until translucent.
  3. Turn off the heat and add the remaining 4 tablespoons of olive oil and the balsamic vinegar.
  4. In a large bowl, combine the warm wheat berries, sautéed onions, scallions, red pepper and carrots, ½ teaspoon of kosher salt and the freshly ground pepper.
  5. Allow the salad to sit for at least 30 minutes for the wheat berries to absorb the sauce.
  6. Serve at room temperature.
