Tuna pasta salad with kale

  • 8 oz whole wheat pasta shells
  • 2 tablespoon Balsamic vinegar
  • 3 cups Kale, rib removed and chopped
  • ½ cup red pepper, diced
  • 12 oz albacore tuna
  • 3 tablespoon light mayonnaise
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon lemon juice
  • 1 tablespoon ketchup
  • ½ cup green onions, diced
  • 1 cup celery, diced

Directions:

  1. Cook the Quinoa pasta shells according to the package directions (cook 6-9 minutes in 4 quarts boiling water). Drain the shells and add balsamic vinegar, kale, and red pepper.
  2. In a separate bowl mix tuna, lemon juice, Worcestershire sauce, mayonnaise, ketchup, green onions and celery.
  3. Add tuna mixture to pasta mixture and mix thoroughly.
