Taco salad with black beans and rice

Serves 6

Ingredients:

  • 2 15 oz can black beans
  • 15 oz can diced tomatoes
  • 1 teaspoon garlic powder
  • 1 teaspoon onion salt
  • ½ tablespoon olive oil
  • 2 cups brown rice
  • 2 cups lettuce
  • ½ cup shredded cheddar cheese
  • 2 teaspoon reduced fat sour cream (optional)
  • 2 tablespoon salsa (optional

Directions:

  1. Heat olive oil over medium heat in pan, add black beans (do not rinse, drain and reserve some juice for later) and diced tomatoes (I use petite diced tomatoes & only ½ of the juice).
  2. Stir fry until heated and juice is thick.
  3. Add garlic powder and onion salt (add more or less depending on your tastes).
  4. Add reserved black bean juice to desired consistency.
  5. Mix raw brown and white rice together and cook according to directions. Mix cooked rice with salsa.
  6. Chop up lettuce and shred cheese.
  7. Serve as a taco salad, lettuce, cheese with beans & rice.
