Grilled vegetable pizza

Ingredients:

  • 1 tsp olive oil
  • 1 tsp balsamic vinegar
  • 1/8 tsp salt
  • 1/8 tsp freshly ground pepper
  • 1 medium yellow squash, cut lengthwise into 1/4-inch slices
  • 1 medium zucchini, cut lengthwise into 1/4-inch slices
  • Cooking spray
  • 1 packaged pizza crust, 12-inches
  • 3 roma tomatoes, sliced in 1/8-inch slices
  • ¼ cup grated Romano cheese
  • 2 tsp sliced fresh basil

Directions:

  1. Prepare and heat grill.
  2. Combine oil, balsamic vinegar, salt, pepper, squash and zucchini slices in large bowl. Toss gently to coat.
  3. Place squash mixture on grill rack coated with cooking spray. Grill 2 minutes on each side or until tender.
  4. Reduce grill to medium.
  5. Lightly coat pizza crust with cooking spray. Grill 1 minute each side or until lightly toasted.
  6. Arrange zucchini and squash over crust. Place tomatoes over squash. Sprinkle with cheese.
  7. Grill 5 minutes or until heated thoroughly. Remove from grill.
  8. Top with basil and serve.
