I found this recipe online, added a few adjustments and made it for a Breakfast Potluck at the office. I cooked this casserole in a Nesco electric roaster and it produced enough for 25 people (smaller servings). This recipe will easily feed 10 hungry people as the main breakfast dish.

| Ingredients: - 1 lb. chopped ham
- 3 cups frozen hash brown potatoes, thawed
- 1/2 teaspoon salt
- 3 cups (12 oz.) low-moisture cheddar cheese
- 1 chopped red bell pepper
- 8 chopped artichoke halves (frozen or jar or canned, packed in water)
- 8 asparagus spears
- 6 large eggs + 6 egg whites, beaten
- 2 cups milk
Directions:- Preheat oven to 350º F. Lightly grease a 13 x 9 baking pan.
- Cook ham in skillet until warmed thoroughly; set aside.
- Place potatoes in the baking dish, sprinkle with salt.
- Layer ham, cheese, red pepper, artichokes and asparagus.
- Combine beaten eggs and egg whites with milk; stir well, and pour over layered caserole.
- Bake for about 50 minutes or until set in the middle.
