Green Tomato and Watermelon Salsa

(makes 6 servings)

Great with chips or served on grilled fish, chicken or pork.

Ingredients:

  • 1½ cups green tomatoes, finely chopped (Can substitute sixteen tomatillos)
  • 1½ cups red watermelon, finely chopped
  • 2/3 cup red onion, minced
  • 1 serrano pepper, minced (include seeds for added heat)
  • ¼ cup cilantro, chopped (can use flat leaf parsley if you're not a cilantro fan)
  • 1 teaspoon fresh lime juice
  • ½ teaspoon salt

Directions:

  1. Toss together tomatoes, watermelon, onion, pepper, cilantro, lime juice, and salt.
  2. Serve immediately. (Do not make salsa more than 1 hour ahead or it will become watery.)
