Green Tomato and Watermelon Salsa(makes 6 servings)
Great with chips or served on grilled fish, chicken or pork.

Ingredients:- 1½ cups green tomatoes, finely chopped (Can substitute sixteen tomatillos)
- 1½ cups red watermelon, finely chopped
- 2/3 cup red onion, minced
- 1 serrano pepper, minced (include seeds for added heat)
- ¼ cup cilantro, chopped (can use flat leaf parsley if you're not a cilantro fan)
- 1 teaspoon fresh lime juice
- ½ teaspoon salt
Directions:- Toss together tomatoes, watermelon, onion, pepper, cilantro, lime juice, and salt.
- Serve immediately. (Do not make salsa more than 1 hour ahead or it will become watery.)
